Abstract

The results of chemical composition in two species(a white-flowered lotus in Muan and a pink-flowered lotus in Naju) and in different parts(roots, leaves and seeds) of lotus(Nelumbo nucifera Gaertn) are as follows;
Crude protein content in the seed was 4 times over higher and carbohydrate content was 3 times higher than those of root or leaf. Compared with the species, the crude protein content of the white-flowered lotus much higher than that of the pink-flowered lotus, but the content of carbohydrate was relatively lower. The potassium content of the minerals in all samples was much higher than those in others. Especially, Fe content of root was very higher than those in leaf or seed. Major free sugar in the root was sucrose, in the leaf were fructose and glucose and in the seed were stachyose, raffinose and sucrose in both species. Total organic acid content of seed was the highest in seed, and that of leaf was the lowest content. Citric acid, tartaric acid, malic acid, succinic acid and acetic acid was contained in the seed, in the other hand tartaric acid not contained in the root, and only in the leaf were contained malic acid, succinic acid and acetic acid. Compare to content of amino acid, glutamic acid was the highest amino acid in the leaf and seed, in the other hand aspartic acid was the highest in the root.
